Ingredients

• 4 slicesrustic country bread or ciabatta
• 40 mlextra virgin olive oil
• 50 gaged hard cheese (e.g., Parmesan or aged Pecorino)
• 1 piecegarlic clove
• 1 pinchsea salt
• 1 pinchfreshly ground black pepper

Preparation

1. 1Cut the bread into slices approximately 1.5 cm thick.
2. 2Toast the slices in a dry pan or in a preheated oven at 200 degrees Celsius until golden brown and crispy.
3. 3Halve the garlic clove and gently rub the cut side over the warm bread slices to impart a subtle aroma.
4. 4Drizzle the premium olive oil generously and evenly over the toasted slices.
5. 5Using a vegetable peeler or grater, shave the hard cheese into fine, thin flakes directly over the bread.
6. 6Sprinkle with a pinch of sea salt and freshly ground pepper, then serve immediately while the bread is still crispy.
